BH Jelly Making Tips

Just done a lemon flavoured one with Hosen brand canned cocktail.

Discovery tonite :
1) Substitute cold water with ice. It quickens the process much faster and you achieve the semi-solid state pretty quickly for you to dump your cocktail in to create a scattered effect.
(dunno what i mean-----??? Am quite lousy at explaining...erm, you dissolve the crystals in 1 cup of hot water as per instructions. By right the second cup of water is supposed to be cold, but you substitue it with ice cubes instead. Coz the first cup is hot, when you add in the ice cubes, it cools down very quickly as the cubes melt....Errrr, get it?)

2) Do not do the "cocktail bits" test to see if the bits float. Use a spoon to test how far the jelly mixture has jelly-fied (??). Visually, if you drag the spoon in the mixture, it should leave a tail in the mixture. Roughly the consistency is about that of the raw egg white. The time I took was about 2h15min before the mixture achieved the correct consistency

3) To get a really scattered effect with the cocktail bits, after adding it in, STIR REALLY HARD! (cos the bits tend to float and lump together)

Yeah yeah....am gonna have lemon jelly with cocktail tomorrow.

Will try a new recipe on Saturday nite- substitute water with flavoured ice tea when dissolving the crystals.
